How to find function from table data

Hi. I need help with searching function from 2d table data.
I can find function for 2 variables (1 dependent and 1 independent) with Microsoft Excel by adding data to Line chart, show trendline and show its equation on chart.
But how to do this with 2 independent variables and one dependent? In Microsoft Excel I can put table data to Surface chart, but there is no option like "show trendsurface"... How can I find that function?
(note: I don't need exact function, some aproximation would be good enought).

I have no clue what you are talking about. maybe you could give us an example of what you mean.
