I am a student of calculus and I have, in the past, made great use of Maple 13's interpolation curve-fitting features for curves in the x and f(x) plane. However, I am now interested in curve fitting in the x y z plane but Maple 13 doesn't seem to have a function for this desired action. If anyone knows of a software that can do this and hopefully as well as Maple fits 2D curves, I would greatly appreciate it! And sorry if I chose the wrong forum for this question.

This fit command has been deprecated but it still does the job. You might expereince some round off error because this is a least square numerical fit. ${\it fit}_{{\it leastsquare}_{{[x,y,z]}}({[1,2,3,5,5,5],[2,4,6,8,8,8], [3,5,7,10,15,15]}})$ $z=1 + \frac{13}{3}x - \frac{7}{6}y$ Look harder for what you need, there just ain't a whole lot Maple 13.02 can't do.
